Converting Your Recipes to Agave Nectar
Agave Nectar is sweeter than sugar, so you can use less!
1. Substitute 2/3 cup agave nectar per 1 cup sugar.
2. Compensate for the moisture in the agave nectar by reducing other liquids added by 1 FL OZ per 2/3 cup agave used. Or, estimate the moisture to be approx. 20% of the agave used.
3. To avoid overbrowning, oven temperature should be reduced by 25 deg. F and baking time increased by 6% to compensate.
This general guide should be suitable for most recipes, but don’t be afraid to tweak it to suit your personal taste.
Important Note:
Madhava’s Agave Nectar is sold by Net Weight. This is not the same as the measure of volume, FL OZ. Most recipes use a FL OZ measurement and our 11.75 oz Net Wt. size contains 8 FL OZ (1 cup).
Agave is measured this way because its volume fluctuates with temperature. The same is true of honey which is also sold by weight. This is the most accurate way to measure these foods, as it does not vary.
