Whole Grain Buttermilk Pancakes

Whole Grain Buttermilk Pancakes (Gluten Free)
Ingredients:
½ cup millet flour
½ cup brown rice flour
¼ cup tapioca flour
½ cup buckwheat flour
½ teaspoon salt
¼ cup buttermilk powder
1 teaspoon baking powder
3 tablespoons grape seed or coconut oil
¼ cup Madhava’s Agave
2 eggs, lightly beaten
1 cup of any kind of milk (cow, almond, rice, goat, etc.) or water
Directions:
1. In a bowl, mix together flours, salt, buttermilk and baking powder.
2. Stir in the eggs, oil, agave, and enough water or milk. The batter should be the consistency of thick heavy cream.
3. Ladle the mixture onto a hot, oiled griddle. When holes appear on the surface of the pancakes, turn to brown second side.
