Another Pecan Pie

Pecan Pie
8 servings

1 9-inch unbaked pie shell
3 eggs (beaten)
1/3 cup heavy cream
1 cup Madhava’s Light Agave
4 tablespoons butter (melted)
2 teaspoons vanilla extract
2 cups pecans (chopped)
¼ teaspoon salt 

Directions:

 1.        Preheat oven to 325°.

2.       In a medium bowl combine eggs, cream agave, butter and vanilla.  Stir in pecans.

3.       Pour into a 9-inch pastry-lined pie plate.

4.       Bake for 55 minutes.

5.       Cool on wire rack.  Filling flattens out as it cools.  Serve at room temperature.
