Cranberry Relish

Cranberry Relish

3 1/2 cups fresh cranberries
1 cup chopped dried apricots
1/2 tsp ginger
1/4 tsp cardamom
pinch salt
2/3 cup Madhava’s Agave (I used Light Agave and Hazelnut Agave mixed)
2/3 cup water
1/2 cup pecans

Directions:

Bring water and agave to boil, add cranberry, apricots, salt, and cardamom.  Cook until cranberries pop and sauce is thickened. Remove from heat, place in a glass or heat proof bowl to cool.  Let cool and add nuts. You may make up to one week before serving.
