Sweet Potato Casserole

Sweet Potato Casserole
6 servings

Filling

3 ½ cups cooked, mashed sweet potatoes
1/3 cup Madhava’s Light Agave
2 eggs  (beaten)
½ cup butter (melted)
1 teaspoon vanilla extract
½ teaspoon ground cinnamon 

Directions:

1.       Preheat oven to 350°.  Grease an 8 x 11 casserole dish.  Set aside.

2.       In a medium bowl, combine mashed sweet potatoes, eggs, agave, butter, vanilla, and cinnamon.  Stir.  Pour into prepared dish.  Spread evenly.

3.       Prepare topping below. 

Topping 

2/3 cup Madhava’s Light Agave
1 cup pecans (chopped)
1/3 cup whole wheat flour
¼ teaspoon ground cinnamon

 Directions:

1.        In a small bowl combine all ingredients.

2.       Drop by spoonful evenly across surface of potatoes.

3.       Spread lightly with spoon.  Bake uncovered for 30-35 minutes.
